I don&#8217;t know much about tomatillos except that they are used in salsa. These two recipes my husband has made and they are very tasty.

1 lb. tomatillos, cooked, peeled
1/2 med. onion
3 sprigs cilantro

2 tablespoons finely minced red onion
2 cups boiling water
1 ripe mango (about 6 inches long or about 1 1/2 cups minced)
2 tablespoons fresh lime juice
1 medium clove garlic, mined
1/2 teaspoon salt

 A can of Del Monte Fresh Cut peeled diced tomatoes

2 or three jalapeno peppers

2 large onions
2 tablespoons cold pressed vegetable oil
2 medium tomatoes, washed and diced
